If you haven’t tried making your own crackers, you HAVE to do it! I promise, once you realize how incredibly easy it is, you’ll want to do it all the time, and you’ll realized how overpriced gluten free crackers are at the grocery store. At least that’s how I felt when I made these for the first time. 🙂 The best part is that you can then start to experiment with your own flavors and additions! I know that’s what I’m going to do. These Low FODMAP Tuscan Almond Flour Crackers are mixed with the perfect blend of Italian herbs and garlic-infused olive oil, making them a perfect savory snack. They’re thick yet crispy, so they’re great for dunking into dips or sauces. The best part is that they come together in under 30 minutes! Let’s get into it!
What You’ll Need
Large Bowl & Whisk – For mixing your ingredients.
Silicone Spatula – For combining wet ingredients and forming dough.
Parchment Paper – You’ll need 2 ~12×16″ sheets.
Large Sheet Pan – One that will fit your parchment paper.
About the Ingredients & FODMAP Content
Fine, Blanched Almond Flour – Almond flour is the low-carb base of the cracker, and, according to the Monash University FODMAP Diet app, is low FODMAP in 1/4 cup servings. I’ve used Anthony’s Goods, which I get off of Amazon. From my local grocery store, I’ve also used Bob Red Mill’s.
Tapioca Starch– As almond flour on its own in baked goods can result in a dense finished product, tapioca starch is used to lighten the base. Tapioca flour is low FODMAP in 2/3 cup servings. I use Thrive Market’s or Bob Red Mill’s.
Dried Basil, Oregano, Rosemary, Thyme – The blend of Italian dried herbs gives these crackers a perfectly savory flavor. As we are using only a small amount of each in this recipe, the FODMAP content is negligible.
Egg – Used as a binding element. I have not tried subbing this out for a plant-based alternative!
Garlic-Infused Olive Oil – If using a store-bought oil, be sure it is actually FODMAP-friendly! Not all garlic-infused oils are, depending on the way it was manufactured. More on that in this article by FODMAP Everyday. My favorite Low FODMAP garlic-infused oil is the one by Garlic Gold.
Water – A little bit of water helps to thin out the dough for a crispier cracker.

Tuscan Almond Flour Crackers – Low FODMAP, Paleo, Whole30
Ingredients
- 1 cup fine, blanched almond flour
- 1/2 cup + 2 tablespoons tapioca starch
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried rosemary
- 1/8 teaspoon dried thyme
- 1 large egg
- 2 tablespoons garlic-infused olive oil
- 1 tablespoon water
- flaky sea salt, for topping
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, add almond flour, tapioca starch, fine sea salt and dried herbs. Whisk to thoroughly combine.
- Add egg, garlic-infused olive oil and water. Using a silicone spatula, repeatedly fold mixture into itself until evenly combined, and a dough forms. Roll into a ball. The dough will be firm to the touch, and will not be sticky.
- Place the dough between 2 sheets of parchment paper. Flatten dough slightly with your hands before using a rolling pin to roll out dough into a rectangle, about 1/8 of an inch thick.
- Carefully peel off the top layer of parchment paper. Using a long knife or pizza cutter, slice dough into your desired cracker shape. Top with flaky sea salt and tap large pieces of salt gently to help them adhere to the dough. Leave sliced dough as is on the piece of parchment.
- Transfer parchment paper to baking sheet and bake for 14-16 minutes, until edges start to brown. Once done, remove parchment paper from baking sheet. Let cool completely before breaking crackers apart.
